Being vegan

It took shear will power for me to attempt being vegan. I had loved the idea of being vegan for years but had no will power whatsoever so though I was vegan in spirit, I crumbled at the site of a rack of lamb. But in my 30's and even late 20s I had started to aquire a spare tire around my mid line. So I decided to give vegan-ism a go.
This is my grocery shopping list for a week eating vegan food (of course the kids and hubby have no interest whatsoever in this lifestyle choice:-))
Lentils -red, split, chickpeas, aubergines (lots), courgettes, vegan cheese, mangoes, apples, banana, sweet potatoes, lettuce, water bottles, celery, onions, tomatoes-fresh, tomatoes-tin, kale, frozen berries, avocado (loads!), raisins, plantain chips (to snack on).
Now I made this yummy vegan mousakka:

Chop onions, carrots, celery and garlic and stir fry in a LITTLE oil.

Add 1-2 cans of chopped tomatoes and lentils. season to taste.This will be your red sauce.

Cut 2 large aubergines in slices, fry for 90 seconds each side and towel dry. Fry some sweet potatoes (slices), mushrooms and courgette slices in oil. 
Layer as you would lasagne and top with vegan cheese. 

Cook in oven till it starts to look scumptious. The kids and hubby gobbled it up withoiut questioning "where's the meat, mummy?"
